The producers who support the ingredients
Amaou from "Ikegami Farm" in Oki Town, Fukuoka Prefecture
Amaou strawberries grow well in the abundant water and fertile soil of the Chikugo Plain. They are large, bright red, shiny and delicious, making them extremely popular. Ikegami Farm is particular about cultivating them, and every year they work on soil preparation, watering and fertilizing to produce strawberries with a high level of balance of various elements such as sweetness, sourness, aroma, hardness, color and shape. These strawberries have all four qualities that give the name Amaou its name: red, round, large and delicious. Fresh Amaou strawberries are picked in the morning and taken to a factory where they are made into a puree. Kobutsu Okashi, which is filled with puree, tastes just like Amaou strawberries.
Specially grown lemons from Yoshida Farm in Uto, Kumamoto Prefecture
Kumamoto Prefecture is known nationwide as one of the leading citrus kingdoms.
Yoshida Farm is located in Mikata-cho, Kumamoto Prefecture, on a hill surrounded by the Shiranui Sea and mountains. They grow citrus fruits in the open air, soaking up the sunshine and the sea breeze of Shiranui, and producing citrus fruits with a rich, sweet taste. The lemons grown with the minimum amount of pesticides don't look very good, but the whole thing, including the skin, can be used and are delicious to eat for everyone from children to the elderly. The Yoshidas' particular attention to detail is in the soil, and they use high-quality fertilizers made from fish meal and rice bran that are fermented and aged with Lactobacillus lactic acid bacteria. They do not use herbicides in the farm, and weeds are removed by hand all year round. Among them, they chose Meyer lemons, which have a very refreshing aroma. The lemon peels are boiled down with plenty of fruit juice, giving them a rich taste and aroma, and are packed into kobutsu okashi (amber sugar).
